Accademia di Cucina Italiana

“Accademia di Cucina Italiana” is an economic and cultural project created to spread the culture of Italian food and wine abroad. It is based in Italy, specifically in Venice, and is aimed at an English-speaking audience. All the published content has an educational purpose and is designed for those seeking in-depth information on Italian food, the Mediterranean Diet, cooking methods, Italian culinary traditions, and health and wellness (at the table). It is distinguished by the production of video content that aims to give practical demonstrations.

Cultural outreach is also promoted through free seminars dedicated to those interested in exploring the ancient recipes of Italy's cultural traditions, particularly those of the Veneto region. Throughout the year, free classes are organized, offering participants who are new to cooking the opportunity to learn the basics of preparing pasta, rice, and pizza.

The content of the website and YouTube videos are not intended to be simple recipes, but also to teach methods to help readers become more confident in the kitchen and replicate Italian dishes with health in mind.

The idea stems from noticing how foreign audiences from all parts of the world and tourists who travel to Italy each year are often deprived of the most basic information about Italian culinary culture. In addition to this is the dissemination on YouTube of videos that misrepresent the Italian style of cooking produced by “fake” American chefs who display their lack of knowledge. Hence the idea of producing English-language content with high educational value.  

A typical example of published content is an in-depth section on cooking risotto according to the Italian method. Even if rice is a basic ingredient around the world, there is a lot of confusion about how it is cooked in Italy.  Hence the idea of an in-depth video showing basic cooking techniques designed to help people understand not just a single recipe, but rather the technique behind a successful dish. Having learned the technique, it is possible to create endless variations based on seasoning and ingredients ( fish, meat or vegetables).

In addition to the videos an in-depth fact with technical notions of history and popular culture is provided.  

With the same goal, another example, is the section on homemade tomato sauce. A seemingly lengthy preparation, if you know how to organize it, it guarantees easy satisfaction. An in-depth video, talks about the variety of Italian tomatoes, their characteristics and shows the techniques and  variants to prepare tomato sauce at home. Video, pictures and text guarantee to dispel myths and false fears not being able to make at home as our grandmothers always did.

The Accademia di Cucina Italiana project was created and developed by Tiozzo Gioia, a Venetian psychologist specializing in nutrition. To her credit, years of practical teaching of the basics of the Mediterranean Diet to an English-speaking audience.
